Air Fryer Eggplant Asian Style

2 medium eggplants, cut into 1-inch cubes

2 tablespoons avocado oil

3 tablespoons soy sauce

1 tablespoon sugar

3 cloves garlic, minced

12 teaspoons chili oil

Instructions

  • Prep Eggplant: Cut eggplants into 1-inch cubes. Toss with avocado oil in a large bowl.
  • Make Sauce: Mix soy sauce, sugar, minced garlic, and chili oil in a small bowl.
  • Preheat: Set air fryer to 380°F and preheat for 3 minutes.
  • First Cook: Place eggplant in air fryer basket. Cook 12 minutes, shaking halfway through.
  • Add Sauce: Pour sauce over eggplant and toss. Cook another 8 minutes until golden.

 

  • Serve: Transfer to serving dish immediately while hot.
