Air Fryer Rice Paper Dumplings

For the Filling:

  • 1 tablespoon sesame oil
  • 1 medium onion, finely diced
  • 3 cloves garlic, minced
  • 1 cup carrots, julienned
  • 1 medium zucchini, julienned
  • 1 red bell pepper, thinly sliced
  • 2 cups pointed cabbage, thinly sliced
  • 2 tablespoons coconut aminos
  • 1 tablespoon soy sauce
  • 1 teaspoon Chinese 5 spice
  • 1/2 teaspoon chili powder
  • 2 spring onions, chopped
  • 1215 rice paper sheets

For the Peanut Dipping Sauce:

 

  • 3 tablespoons peanut butter
  • 1 tablespoon maple syrup
  • 1 tablespoon rice vinegar
  • 1/2 teaspoon ginger powder
  • 1/2 teaspoon garlic powder
  • 23 tablespoons water

Instructions

  • Cook Filling: Heat sesame oil in a large skillet over medium-high heat. Add onion and cook 2 minutes. Add garlic and cook 30 seconds.
  • Add Vegetables: Stir in carrots, zucchini, bell pepper, and cabbage. Cook 5-6 minutes until tender-crisp.
  • Season: Add coconut aminos, soy sauce, Chinese 5 spice, and chili powder. Cook 1 minute. Remove from heat and stir in spring onions. Let cool slightly.
  • Soften Rice Paper: Dip one rice paper sheet in warm water for 5-10 seconds until soft. Place on a clean towel.
  • Fill and Roll: Place 2 tablespoons filling in the center. Fold bottom over filling, fold in sides, and roll tightly. Repeat with remaining ingredients.
  • Air Fry: Preheat air fryer to 375°F. Brush dumplings with sesame oil. Place in a single layer and cook 10-12 minutes, flipping halfway, until golden and crispy.
  • Make Sauce: Whisk together peanut butter, maple syrup, rice vinegar, ginger powder, garlic powder, and water until smooth.

 

  • Serve: Arrange dumplings on a platter and serve with peanut dipping sauce.
