Easy Asian Chicken Cranberry Salade

For the Salad:

  • 4 cups (about 12 oz) coleslaw mix
  • 3 cups shredded rotisserie chicken
  • 1/2 cup sliced almonds
  • 1/2 cup cashews, roughly chopped
  • 1/2 cup dried cranberries
  • 1/4 cup thinly sliced red onion
  • 1 cup sesame sticks
  • 1/4 cup chopped fresh cilantro
  • 1 can (11 oz) mandarin oranges, drained
  • 2 tablespoons sesame seeds

For the Dressing:

 

  • 1/4 cup olive oil
  • 3 tablespoons balsamic vinegar
  • 2 tablespoons soy sauce
  • 2 cloves garlic, minced
  • 2 tablespoons honey
  • 1 tablespoon brown sugar
  • 1 teaspoon fresh grated ginger (or 1/2 teaspoon ground ginger)
  • 1 tablespoon sesame oil
  • 2 tablespoons water

Instructions

  • Make the Dressing: In a small bowl or jar, whisk together olive oil, balsamic vinegar, soy sauce, minced garlic, honey, brown sugar, ginger, sesame oil, and water until smooth. Set aside.
  • Combine Salad Base: In a large bowl, add coleslaw mix and shredded rotisserie chicken.
  • Add Mix-Ins: Add almonds, cashews, dried cranberries, sliced red onion, and chopped cilantro. Gently fold in drained mandarin oranges.
  • Dress the Salad: Pour dressing over the salad and toss gently until everything is evenly coated.
  • Add Final Touch: Just before serving, add sesame sticks and sprinkle with sesame seeds.

 

  • Serve: Transfer to a serving bowl and enjoy immediately, or refrigerate until ready to serve.
