For the Chicken:

  • 2 pounds (about 34) chicken breasts
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 and 1/2 cups BBQ sauce

For Serving:

 

  • 68 sandwich rolls or hamburger buns
  • 2 cups coleslaw (store-bought or homemade cabbage mix)
  • Dill pickles, sliced
  • Extra BBQ sauce for serving

Instructions

  • Prepare Crockpot: Place chicken breasts in the bottom of a 4-6 quart slow cooker.
  • Season: Sprinkle garlic powder, salt, and black pepper evenly over both sides of the chicken.
  • Add Sauce: Pour BBQ sauce over the seasoned chicken, making sure each piece is coated.
  • Cook: Cover and cook on low for 4-6 hours or high for 2-3 hours, until chicken reaches 165°F internal temperature and shreds easily.
  • Shred: Use two forks to shred the chicken directly in the crockpot. Stir to coat all pieces with sauce.
  • Rest: Let shredded chicken sit in sauce for 10-15 minutes to absorb flavors.

 

  • Serve: Pile chicken onto toasted buns. Top with coleslaw and pickle slices. Serve with extra BBQ sauce on the side.
