8 ounces (226g) cream cheese, softened to room temperature
1 cup (113g) shredded cheddar cheese
6 strips bacon, cooked crispy and crumbled
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/4 teaspoon smoked paprika
1/4 teaspoon black pepper
For the Coating:
1 cup (125g) all-purpose flour
2 large eggs
2 tablespoons milk
3 cups (about 150g) crushed Nacho Cheese Doritos
Vegetable oil for frying
Instructions
Make the Filling: In a large bowl, mix cream cheese, cheddar cheese, crumbled bacon, garlic powder, onion powder, smoked paprika, and black pepper until smooth and well combined.
Shape the Bites: Use a cookie scoop or tablespoon to form the mixture into 1-inch balls. Place on a plate and freeze for 10 minutes to firm up.
Prepare Breading Station: Place flour in one bowl, whisk eggs and milk in a second bowl, and add crushed Doritos to a third bowl.
Coat Each Bite: Roll each chilled ball in flour, dip in egg mixture, then coat with crushed Doritos, pressing gently to help the coating stick.
Heat Oil: Pour vegetable oil into a deep pot or skillet to about 2 inches deep. Heat to 350°F.
Fry: Working in batches, carefully add bites to hot oil. Fry for 2-3 minutes, turning occasionally, until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.
Serve: Let cool for 1-2 minutes, then serve warm with your favorite dipping sauces.
