For the Filling:

  • 1 pound (454g) ground beef (80/20)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 tablespoon Worcestershire sauce
  • 1 cup (113g) diced sharp cheddar cheese
  • 1 cup (113g) shredded mozzarella cheese
  • 6 strips bacon, cooked and crumbled
  • 1/4 cup (40g) diced dill pickles
  • 1/4 cup (40g) caramelized onions

For the Dough:

  • 2 cans (16 ounces each) refrigerated biscuit dough OR 1 pound pizza dough

For the Topping:

 

  • 4 tablespoons (57g) unsalted butter, melted
  • 2 cloves garlic, minced
  • 1/3 cup (30g) grated Parmesan cheese
  • 1 tablespoon fresh parsley, chopped (or 1 teaspoon dried)

Instructions

  • Cook the Beef: Heat a large skillet over medium-high heat. Add ground beef and season with salt, pepper, garlic powder, onion powder, and Worcestershire sauce. Cook until browned, about 6-8 minutes. Drain excess fat and let cool slightly.
  • Mix Filling: In a large bowl, combine cooked beef, cheddar cheese, mozzarella cheese, crumbled bacon, diced pickles, and caramelized onions. Mix well.
  • Prepare Dough: Separate biscuit dough into individual pieces (or cut pizza dough into 16 equal squares). Flatten each piece slightly.
  • Fill and Seal: Place 2 tablespoons of filling in the center of each dough piece. Pull edges up and pinch together to seal completely. Roll into a smooth ball.
  • Preheat and Arrange: Preheat oven to 375 degrees F (190 degrees C). Line a baking sheet with parchment paper. Place bombs seam-side down, spacing 2 inches apart.
  • Make Garlic Butter: Melt butter and stir in minced garlic.
  • Brush and Top: Brush each bomb with garlic butter. Sprinkle with Parmesan cheese and parsley.
  • Bake: Bake for 15-18 minutes until golden brown and cooked through.

 

  • Cool and Serve: Let cool for 3-5 minutes before serving.
