1 teaspoon salt
1/2 teaspoon black pepper
1/2 pound cooked shrimp, chopped small
1/2 pound lump crab meat, picked over for shells
4 oz cream cheese, softened
1/2 cup shredded mozzarella cheese
3 tablespoons mayonnaise
1 tablespoon Dijon mustard
1 teaspoon Old Bay seasoning
1/2 teaspoon garlic powder
2 tablespoons fresh lemon juice
2 tablespoons fresh parsley, chopped
Heat Oven: Preheat oven to 400°F. Grease a baking dish.
Make Stuffing: Mix shrimp, crab, cream cheese, mozzarella, mayo, mustard, Old Bay, garlic powder, lemon juice, and parsley in a bowl. Season with salt and pepper.
Cut Salmon: Pat salmon dry. Cut a pocket in each fillet by slicing three-quarters through the thickest part.
Stuff Salmon: Fill each pocket with seafood mixture using a small spoon.
Season: Brush salmon with olive oil and season with salt and pepper.
Bake: Place in baking dish and bake 20-25 minutes until salmon flakes easily and reaches 145°F.
Rest: Let salmon rest 3-5 minutes before serving.
