Ingredients

  • 10 large eggs

  • ½ teaspoon onion powder

  • ½ teaspoon garlic powder

  • ¼ teaspoon salt

  • ¼ teaspoon pepper

  • ½ cup red onion, diced

  • ½ cup orange bell pepper, diced

  • ½ cup red bell pepper, diced

  • 1 cup spinach, roughly chopped

Instructions

  • Preheat oven to 350°F (175°C). Grease a 12-cup muffin tin.

  • Whisk eggs, onion powder, garlic powder, salt, and pepper until smooth.

  • Stir in diced onions, bell peppers, and spinach.

  • Pour mixture evenly into muffin cups, about ¾ full.

  • Bake for 20-25 minutes until puffed and set.

 

  • Cool 5 minutes, then gently remove from tin. Serve warm or store.
