French Onion Beef Rice Casserole

  • 1 and 1/2 pounds (680g) lean ground beef
  • 2 cups (400g) uncooked white rice
  • 4 cups (960ml) beef broth
  • 2 large onions, thinly sliced
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon dried thyme
  • Salt and pepper to taste
  • 2 cups (225g) shredded Swiss cheese
  • 1 and 1/2 cups (85g) French fried onions

 

  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Caramelize Onions: Preheat oven to 375°F (190°C). Heat olive oil in a large skillet over medium heat. Add sliced onions and cook for 15 minutes, stirring often, until golden brown. Remove and set aside.
  2. Cook Beef: In the same skillet, brown ground beef over medium-high heat for 8 minutes, breaking into small pieces. Drain fat.
  3. Season: Add garlic powder, onion powder, thyme, salt, and pepper to beef. Stir well.
  4. Assemble: In a 9×13 inch casserole dish, combine uncooked rice, seasoned beef, caramelized onions, and beef broth. Mix thoroughly.
  5. First Bake: Cover tightly with foil. Bake for 35 minutes until rice is tender.
  6. Add Cheese: Remove foil. Sprinkle Swiss cheese and French fried onions evenly over top.
  7. Final Bake: Bake uncovered for 10 minutes until cheese melts and onions are crispy.
  8. Rest: Let stand 5 minutes. Garnish with fresh parsley before serving.
