For the Chicken:

  • 2 pounds boneless, skinless chicken breasts or thighs, cut into 1.5-inch cubes
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper

For the Garlic Parmesan Sauce:

 

  • 4 tablespoons butter
  • 6 cloves garlic, minced
  • 1/2 cup grated parmesan cheese
  • 1 tablespoon hot sauce (optional)
  • 1/2 teaspoon red pepper flakes (optional)
  • 2 tablespoons fresh parsley, chopped

Instructions

  • Season the Chicken: In a large bowl, toss chicken cubes with olive oil, garlic powder, onion powder, paprika, salt, and pepper until evenly coated.
  • Thread Skewers: Place 4-5 chicken pieces on each skewer, leaving small spaces between pieces.
  • Make the Sauce: Melt butter in a small saucepan over medium heat. Add garlic and cook for 1-2 minutes. Remove from heat and stir in parmesan, hot sauce, and red pepper flakes.
  • Cook (Choose Your Method):
    • Grill: Cook on oiled grates at 400°F for 4-5 minutes per side.
    • Oven: Bake at 425°F for 18-20 minutes, flipping halfway.
    • Stovetop: Pan-sear in a hot skillet for 3-4 minutes per side.

 

  • Brush and Serve: Brush cooked skewers generously with garlic parmesan sauce. Sprinkle with fresh parsley and serve hot.
