Glazed Salmon Garlic Mashed Potatoes

For the Salmon:

  • 4 salmon fillets (6 ounces each)
  • 2 tablespoons olive oil
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon sesame oil
  • 1 teaspoon Old Bay seasoning
  • 1/2 teaspoon Jamaican allspice
  • 1 teaspoon garlic powder
  • 1 teaspoon Creole seasoning
  • 1 packet Sazon Goya

For the Glaze:

  • 3 tablespoons Jack Daniels whiskey
  • 3 tablespoons brown sugar
  • 3 tablespoons honey
  • 2 tablespoons soy sauce
  • 1 tablespoon cornstarch mixed with 2 tablespoons water

For the Garlic Mashed Potatoes:

  • 2 pounds red potatoes, cut into chunks
  • 4 tablespoons butter
  • 1/4 cup milk
  • 1/4 cup heavy cream
  • 4 cloves garlic, minced
  • Salt and pepper to taste

For the Green Beans:

 

  • 1 pound fresh green beans, trimmed
  • 2 tablespoons butter
  • Salt and pepper to taste

Instructions

  • Cook Potatoes: Place potatoes in a pot with salted water. Bring to a boil and simmer for 15 to 20 minutes until tender.
  • Season Salmon: Pat salmon dry. Mix all dry seasonings. Brush salmon with olive oil, Worcestershire sauce, and sesame oil. Sprinkle seasoning mix on top.
  • Make Glaze: In a small saucepan, combine Jack Daniels, brown sugar, honey, and soy sauce. Heat until bubbling. Add cornstarch slurry and whisk until thick, about 2 minutes. Remove from heat.
  • Bake Salmon: Preheat oven to 400 degrees. Place salmon on a lined baking sheet. Bake 12 to 15 minutes. Brush with glaze during the last 3 minutes.
  • Mash Potatoes: Drain cooked potatoes. Melt butter with minced garlic for 1 minute. Add to potatoes with milk and cream. Mash until smooth. Season with salt and pepper.
  • Cook Green Beans: Boil green beans for 4 to 5 minutes until crisp-tender. Drain and toss with butter, salt, and pepper.

 

  • Serve: Plate potatoes, top with salmon, and arrange green beans alongside. Brush salmon with remaining glaze.
