1 box (15.25 oz) red velvet cake mix
4 oz cream cheese, softened
½ cup (1 stick) unsalted butter, softened
1 large egg
1 tsp pure vanilla extract
½ cup white chocolate chips
½ cup powdered sugar (for rolling)
Cream the butter and cream cheese in a bowl until smooth.
Add the egg and vanilla, mixing well.
Add the cake mix and mix until a soft dough forms.
Fold in the white chocolate chips.
Cover and chill the dough for 30 minutes.
Preheat oven to 350°F (177°C). Line baking sheets with parchment paper.
Scoop dough into 1.5–2 tablespoon balls. Roll each in powdered sugar.
Place on baking sheet 2 inches apart. Bake for 10–12 minutes.
Let cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack.
