Ingredients

  • 1 box (15.25 oz) red velvet cake mix

  • 4 oz cream cheese, softened

  • ½ cup (1 stick) unsalted butter, softened

  • 1 large egg

  • 1 tsp pure vanilla extract

  • ½ cup white chocolate chips

  • ½ cup powdered sugar (for rolling)

Instructions

  1. Cream the butter and cream cheese in a bowl until smooth.

  2. Add the egg and vanilla, mixing well.

  3. Add the cake mix and mix until a soft dough forms.

  4. Fold in the white chocolate chips.

  5. Cover and chill the dough for 30 minutes.

  6. Preheat oven to 350°F (177°C). Line baking sheets with parchment paper.

  7. Scoop dough into 1.5–2 tablespoon balls. Roll each in powdered sugar.

  8. Place on baking sheet 2 inches apart. Bake for 10–12 minutes.

  9. Let cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack.
