Prep: Dice zucchini, cube sweet potato, chop onion, and mince garlic.
Brown Beef: Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add ground beef, breaking it apart with a spoon. Cook 5-6 minutes until fully browned.
Add Aromatics: Push beef aside. Add remaining oil, then onion. Cook 2 minutes. Add garlic and cook 30 seconds.
Season: Mix beef back in. Add cumin, paprika, chili powder, salt, and pepper. Stir well and cook 1 minute.
Add Vegetables: Add diced sweet potato and zucchini. Stir to combine.
Cook: Reduce heat to medium. Cook 8-10 minutes, stirring occasionally, until vegetables are tender.
Taste & Adjust: Season to preference.
Serve: Top with fresh parsley and serve immediately.
