Ground Beef Zucchini Skillet

  • 1 pound ground beef
  • 2 medium zucchini, diced
  • 1 medium sweet potato, diced
  • 1 medium yellow onion, finely diced
  • 3 garlic cloves, minced
  • 2 tablespoons olive oil
  • 1.5 teaspoons ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon chili powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

 

  • 1/4 cup fresh parsley, chopped

Instructions

  • Prep: Dice zucchini, cube sweet potato, chop onion, and mince garlic.
  • Brown Beef: Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add ground beef, breaking it apart with a spoon. Cook 5-6 minutes until fully browned.
  • Add Aromatics: Push beef aside. Add remaining oil, then onion. Cook 2 minutes. Add garlic and cook 30 seconds.
  • Season: Mix beef back in. Add cumin, paprika, chili powder, salt, and pepper. Stir well and cook 1 minute.
  • Add Vegetables: Add diced sweet potato and zucchini. Stir to combine.
  • Cook: Reduce heat to medium. Cook 8-10 minutes, stirring occasionally, until vegetables are tender.
  • Taste & Adjust: Season to preference.

 

  • Serve: Top with fresh parsley and serve immediately.
