Ridiculously Healthy Carrot Oat Cookies

  • 1 cup (about 110g) grated carrot
  • 10 Medjool dates, pitted
  • 1 ripe banana, peeled
  • 2 cups (180g) rolled oats
  • 1/2 cup (60g) walnuts, roughly chopped
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground nutmeg

 

  • 1/4 teaspoon salt

Instructions

  • Prepare Ingredients: Pit dates, peel banana, and grate carrot finely.
  • Blend Base: In a food processor, combine dates, banana, and grated carrot. Blend until smooth and well mixed.
  • Add Dry Ingredients: Add oats, walnuts, cinnamon, ginger, nutmeg, and salt to the food processor. Pulse until combined and oats are broken down but still slightly chunky.
  • Preheat and Prepare: Preheat oven to 350 degrees. Line a baking sheet with parchment paper.
  • Shape Cookies: Scoop dough into tablespoon-sized portions and place on baking sheet about 2 inches apart. Flatten each cookie slightly with your fingers.
  • Bake: Bake for 12 to 15 minutes until edges are golden and cookies are set. Centers will look slightly soft.

 

  • Cool: Let cookies rest on baking sheet for 5 minutes before transferring to a wire rack to cool completely.
