1 cup (about 110g) grated carrot
10 Medjool dates, pitted
1 ripe banana, peeled
2 cups (180g) rolled oats
1/2 cup (60g) walnuts, roughly chopped
1 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/4 teaspoon ground nutmeg
1/4 teaspoon salt
Instructions
Prepare Ingredients: Pit dates, peel banana, and grate carrot finely.
Blend Base: In a food processor, combine dates, banana, and grated carrot. Blend until smooth and well mixed.
Add Dry Ingredients: Add oats, walnuts, cinnamon, ginger, nutmeg, and salt to the food processor. Pulse until combined and oats are broken down but still slightly chunky.
Preheat and Prepare: Preheat oven to 350 degrees. Line a baking sheet with parchment paper.
Shape Cookies: Scoop dough into tablespoon-sized portions and place on baking sheet about 2 inches apart. Flatten each cookie slightly with your fingers.
Bake: Bake for 12 to 15 minutes until edges are golden and cookies are set. Centers will look slightly soft.
Cool: Let cookies rest on baking sheet for 5 minutes before transferring to a wire rack to cool completely.
