For the Honey Lime Chicken:

  • 4 boneless, skinless chicken breasts (1.5 lbs)
  • 1/3 cup honey
  • 1/4 cup fresh lime juice
  • 2 tablespoons lime zest
  • 3 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

For the Rice:

  • 1 cup jasmine rice
  • 2 cups chicken broth
  • 1/4 teaspoon salt
  • 2 tablespoons fresh cilantro, chopped

For the Avocado Layer:

  • 2 large ripe avocados
  • 2 tablespoons lime juice
  • 1/4 teaspoon salt
  • 1/4 cup diced tomatoes

For Garnish:

 

  • 1/4 cup crumbled cotija cheese
  • Extra cilantro leaves
  • Lime wedges

Instructions

  1. Make Marinade: Whisk together honey, lime juice, lime zest, olive oil, garlic, cumin, paprika, salt, and pepper in a large bowl.
  2. Marinate Chicken: Pound chicken to even thickness. Add to marinade and coat well. Let sit 20 minutes to 2 hours.
  3. Cook Rice: Rinse rice until water runs clear. Boil chicken broth with salt, add rice, cover, and simmer 18 minutes. Let stand 5 minutes, fluff, and stir in cilantro.
  4. Cook Chicken: Heat skillet over medium-high heat. Cook chicken 6-7 minutes per side until 165°F internal temperature. Add reserved marinade to pan and cook 2-3 minutes until glazed. Rest 5 minutes, then slice.
  5. Prepare Avocado: Dice avocados and mix with lime juice and salt. Stir in tomatoes.
  6. Assemble Stacks: Using a round mold, layer rice, sliced chicken, and avocado mixture. Top with cheese and cilantro. Remove mold carefully.
  7. Serve: Garnish with lime wedges and serve immediately.
