Hot Dog Fried Rice Omelette

Ingredients

  • 2 tablespoons vegetable oil, divided
  • 2 cloves garlic, minced
  • 34 hot dogs, sliced into rounds
  • 2 cups cooked white rice, cold
  • 2 scallions, chopped (white and green parts separated)
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1/4 teaspoon salt, or to taste
  • 1/4 teaspoon black pepper
  • 3 large eggs

 

  • Pinch of salt and black pepper for eggs

Instructions

  • Prepare Ingredients: Make sure rice is cold. Chop hot dogs, garlic, and scallions before cooking.
  • Cook Hot Dogs: Heat 1 tablespoon oil in a large skillet over medium-high heat. Add hot dog slices and cook 2-3 minutes until lightly browned. Remove and set aside.
  • Start Fried Rice: Add remaining oil to skillet. Add garlic and white parts of scallions. Cook 30 seconds until fragrant.
  • Add Rice: Add cold rice, breaking up clumps. Stir-fry 2-3 minutes until heated through.
  • Season: Pour in soy sauce and oyster sauce. Add salt and pepper. Mix well. Return hot dogs to skillet and add green scallions. Stir for 1 minute. Press rice into an even layer.
  • Add Eggs: Beat eggs with a pinch of salt and pepper. Pour over rice evenly. Cook without stirring for 2 minutes until bottom sets.

 

  • Fold and Serve: Fold omelette in half with spatula. Cook 1 more minute. Slide onto plate and serve hot.
