1/2 cup (113g) cottage cheese (full-fat or low-fat)
2 tablespoons (14g) whey protein powder (unflavored or vanilla)
2 tablespoons (14g) egg white protein powder
1/2 teaspoon white vinegar
1/2 teaspoon baking powder
1/4 teaspoon salt
1 tablespoon (12g) allulose (or your preferred keto sweetener)
1/2 teaspoon vanilla extract
Bagel seasoning for topping (optional)
Instructions
Preheat Oven: Set oven to 300°F. Line a baking sheet with parchment paper.
Separate Eggs: Put egg whites in one bowl and yolks in another.
Whip Whites: Add vinegar to egg whites. Beat on high speed until stiff peaks form, about 3-4 minutes.
Mix Base: In the yolk bowl, add cottage cheese, both protein powders, baking powder, salt, allulose, and vanilla. Mix until smooth.
Combine: Stir one spoonful of egg whites into the cottage cheese mixture. Then gently fold in the remaining whites using a folding motion until just combined.
Shape: Spoon mixture onto baking sheet in 8 equal mounds. Gently shape into rounds about half an inch thick.
Top: Sprinkle with bagel seasoning if desired.
Bake: Bake for 20 minutes until golden brown and firm to the touch.
Cool: Let cool on pan for 5 minutes, then transfer to a wire rack.
