  • 3 large eggs, separated, at room temperature
  • 1/2 cup (113g) cottage cheese (full-fat or low-fat)
  • 2 tablespoons (14g) whey protein powder (unflavored or vanilla)
  • 2 tablespoons (14g) egg white protein powder
  • 1/2 teaspoon white vinegar
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 tablespoon (12g) allulose (or your preferred keto sweetener)
  • 1/2 teaspoon vanilla extract

 

  • Bagel seasoning for topping (optional)

Instructions

  • Preheat Oven: Set oven to 300°F. Line a baking sheet with parchment paper.
  • Separate Eggs: Put egg whites in one bowl and yolks in another.
  • Whip Whites: Add vinegar to egg whites. Beat on high speed until stiff peaks form, about 3-4 minutes.
  • Mix Base: In the yolk bowl, add cottage cheese, both protein powders, baking powder, salt, allulose, and vanilla. Mix until smooth.
  • Combine: Stir one spoonful of egg whites into the cottage cheese mixture. Then gently fold in the remaining whites using a folding motion until just combined.
  • Shape: Spoon mixture onto baking sheet in 8 equal mounds. Gently shape into rounds about half an inch thick.
  • Top: Sprinkle with bagel seasoning if desired.
  • Bake: Bake for 20 minutes until golden brown and firm to the touch.

 

  • Cool: Let cool on pan for 5 minutes, then transfer to a wire rack.
