Prawn Orzo Sun Dried Tomatoes

For the Prawns:

  • 1 pound (450g) prawns, peeled and deveined
  • 1 teaspoon paprika powder
  • 1/2 teaspoon red pepper flakes
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt
  • 2 tablespoons olive oil

For the Orzo:

 

  • 4 cloves garlic, minced
  • 1/2 cup (75g) sun-dried tomatoes, chopped
  • 1 and 1/2 cups (300g) orzo pasta
  • 3 cups (720ml) chicken broth
  • 1 cup (150g) broccoli florets
  • 2 cups (60g) fresh spinach
  • 1/2 cup (120ml) heavy cream

Instructions

  • Season Prawns: In a bowl, combine prawns with paprika powder, red pepper flakes, garlic powder, black pepper, and salt. Toss until evenly coated.
  • Cook Prawns: Heat olive oil in a large skillet over medium-high heat. Add prawns and cook for 2 minutes per side until pink and cooked through. Remove and set aside.
  • Sauté Aromatics: In the same skillet, add minced garlic and sun-dried tomatoes. Cook for 1 minute until fragrant.
  • Toast Orzo: Add orzo to the skillet and stir for 1 minute to toast lightly.
  • Simmer: Pour in chicken broth and bring to a boil. Reduce heat to medium and simmer for 8 minutes, stirring occasionally.
  • Add Vegetables: Stir in broccoli florets and cook for 3 minutes. Add spinach and cook for 1 minute until wilted.
  • Finish with Cream: Pour in heavy cream and simmer for 2 minutes until sauce thickens slightly.
  • Combine: Return prawns to the skillet and stir gently to warm through for 1 minute. Adjust seasoning to taste.

 

  • Serve: Spoon into bowls and enjoy immediately.
