  • 8 oz sweet potato glass noodles
  • 4 cups fresh kale, chopped
  • 2 shallots, thinly sliced
  • 3 garlic cloves, minced
  • 3 green onions, chopped
  • 2 tablespoons grapeseed oil
  • 1 tablespoon sesame oil
  • 3 tablespoons soy sauce
  • 2 tablespoons sweet soy sauce
  • 2 tablespoons honey
  • 2 tablespoons sesame seeds

 

  • 12 teaspoons chili crisp (optional)

Instructions

  • Cook Noodles: Boil sweet potato glass noodles for 6-8 minutes. Drain and rinse with cold water.
  • Make Sauce: Mix soy sauce, sweet soy sauce, honey, and sesame oil in a small bowl.
  • Prep Vegetables: Chop kale, slice shallots, mince garlic, and cut green onions.
  • Cook Aromatics: Heat grapeseed oil in large skillet. Cook shallots 2 minutes, add garlic 30 seconds.
  • Add Greens: Stir in kale and cook 2-3 minutes until wilted but crisp.
  • Combine: Add noodles and sauce. Toss gently and cook 1-2 minutes until heated.

 

  • Finish: Top with sesame seeds, green onions, and chili crisp. Serve immediately.
