Prepare Ingredients: Peel and chop the mango into chunks. Juice the lime and orange. Peel the garlic. Remove seeds from chili pepper if desired.
Blend Base Ingredients: Add mango, lime juice, orange juice, honey, cumin, garlic, salt, chili pepper, cilantro, and black pepper to a blender. Blend on high speed for 30 seconds until completely smooth.
Emulsify with Oil: With the blender running on low speed, slowly drizzle in the olive oil in a steady stream. Blend for 15-20 seconds until well combined and creamy.
Taste and Adjust: Sample the dressing. Add more honey for sweetness, lime juice for tang, or chili for heat. Blend briefly after adjustments.
Store: Transfer to an airtight container or jar. Refrigerate until ready to use.
