For the Meatloaf:

  • 2 pounds (907g) ground beef (80/20)
  • 1 large egg, beaten
  • 1 cup (60g) panko breadcrumbs
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 4 green onions, chopped
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil

For the Korean BBQ Glaze:

 

  • 1/4 cup (60g) gochujang
  • 3 tablespoons brown sugar
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 2 tablespoons sesame seeds for garnish

Instructions

  • Preheat and Prep: Preheat oven to 375°F. Line a 9×5 inch loaf pan with parchment paper.
  • Make Glaze: Whisk together gochujang, brown sugar, soy sauce, rice vinegar, and sesame oil. Divide in half.
  • Mix Meatloaf: In a large bowl, combine ground beef, egg, breadcrumbs, garlic, ginger, green onions, soy sauce, sesame oil, and half the glaze. Mix gently until just combined.
  • Shape: Transfer to prepared pan and shape into a loaf. Brush with remaining glaze.
  • Bake: Bake 35-40 minutes until internal temperature reaches 160°F. Brush with more glaze and bake 5 minutes more.

 

  • Rest: Let rest 10 minutes before slicing. Garnish with sesame seeds and green onions.
