1 cup (125g) all-purpose flour
1/2 cup (100g) granulated sugar (for crust)
1/4 tsp salt
1/2 cup (115g) unsalted butter, softened
2 large eggs
1 cup (200g) granulated sugar (for filling)
2 tbsp all-purpose flour (for filling)
1/2 tsp baking powder
1/4 tsp salt
1/3 cup (80ml) fresh lemon juice (about 2 lemons)
1 tbsp lemon zest (finely grated)
Preheat oven to 350°F (175°C).
In a bowl, mix 1 cup flour, 1/2 cup sugar, and 1/4 tsp salt. Cut in butter until crumbly. Press into an 8×8-inch pan. Bake 15-18 minutes until light golden.
In another bowl, whisk eggs, 1 cup sugar, 2 tbsp flour, baking powder, salt, lemon juice, and zest until smooth.
Pour filling over crust and bake 18-20 minutes until just set.
Cool completely, then refrigerate 2+ hours before cutting.
