Gnocchi Tomato Sauce One Pan

  • 2 tablespoons olive oil
  • 8 ounces crimini mushrooms, sliced
  • 1 pound Italian sausage (mild or spicy)
  • 1 pound gnocchi (fresh or shelf-stable)
  • 4 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon Herbs from Provence
  • 1/4 teaspoon red pepper flakes (optional)
  • 2 cups tomato sauce
  • 1 cup chicken broth
  • 1/2 cup water
  • 3 cups fresh spinach
  • Salt and black pepper, to taste

 

  • 1/2 teaspoon dried thyme (or 1 teaspoon fresh)

Instructions

  • Brown the Sausage: Heat olive oil in a large skillet over medium-high heat. Add Italian sausage and cook for 5-6 minutes, breaking it into crumbles, until browned.
  • Cook Mushrooms: Add sliced mushrooms to the pan and cook for 3-4 minutes until softened.
  • Add Aromatics: Stir in minced garlic, Italian seasoning, Herbs from Provence, and red pepper flakes. Cook for 1 minute until fragrant.
  • Build Sauce: Pour in tomato sauce, chicken broth, and water. Stir well and bring to a simmer.
  • Cook Gnocchi: Add gnocchi to the pan and stir to coat. Cover with a lid and cook for 8-10 minutes, stirring occasionally, until gnocchi is tender.
  • Add Greens: Stir in fresh spinach and cook for 1-2 minutes until wilted. Season with salt, black pepper, and thyme.

 

  • Serve: Remove from heat, let rest for 1-2 minutes, and serve warm with optional toppings.
