Sauté Vegetables: Heat olive oil in a large pot over medium heat. Add carrot, celery, and onion. Cook for 5 minutes until softened. Add mushrooms and cook 3 more minutes.
Add Seasonings and Flour: Stir in Italian seasoning and garlic salt. Sprinkle flour over vegetables and stir constantly for 2 minutes.
Add Broth and Rice: Slowly pour in broth while stirring. Add wild rice and bring to a boil. Reduce heat to low, cover, and simmer for 30 minutes until rice is tender.
Add Turkey and Cream: Stir in turkey and cream. Simmer uncovered for 5 minutes to heat through.
Serve: Taste and adjust seasoning. Ladle into bowls and serve hot with bread or crackers.
