Cake:

  • 1 box yellow cake mix (plus box ingredients)
  • 8 ounces cream cheese, softened
  • 1 cup sour cream
  • 3 large eggs
  • 1/3 cup vegetable oil

Cinnamon Filling:

  • 1/2 cup packed brown sugar
  • 2 tablespoons ground cinnamon

Glaze:

 

  • 2 cups powdered sugar
  • 34 tablespoons milk
  • 1 teaspoon vanilla extract

Instructions

  1. Heat oven to 350°F. Grease and flour a 9×13-inch pan.
  2. Combine cream cheese, sour cream, eggs, and oil in a big bowl. Beat until smooth.
  3. Slowly add cake mix. Mix on low until just combined.
  4. Whisk brown sugar and cinnamon together in a small bowl.
  5. Pour half the batter into the pan. Sprinkle the cinnamon mixture over it.
  6. Spread the rest of the batter on top. Sprinkle remaining cinnamon mixture on top.
  7. Bake 40-45 minutes until a toothpick comes out clean and the top is golden brown.
  8. Cool in the pan for at least 30 minutes.
  9. Whisk powdered sugar, milk, and vanilla until smooth.
  10. Drizzle glaze over the cooled cake. Let it set before serving.

Notes

Tips to Get It Right

Room temperature stuff: Make sure your cream cheese and eggs are at room temperature. It helps everything blend smoothly without lumps.

Don’t overmix: Seriously. Mix just until everything comes together. The more you mix, the tougher the cake gets.

Check it right: Stick a toothpick in the center. It should come out clean or with just a few moist crumbs. Not wet batter.

Cool before glazing: Hot cake plus glaze equals glaze running off the sides. Wait at least 30 minutes.

Fix your glaze: Too thick? Add milk one tablespoon at a time. Too thin? Add more powdered sugar.

 

Fancy swirls: Use a knife to gently swirl the cinnamon filling into the batter before baking. Makes the swirls look more defined.
